Indochine Vietnamese Bistro came to be through passion and preparedness. Our love for food and culture is expressed in our menu. From traditional Vietnamese, French and Chinese influences, these dishes represent a variety of the different cultures in Vietnam’s past and present.
Our Head Chef, Tuan Vu, was born and raised in Vietnam and then relocated to America in 1985. Both his father and uncle grew up in Hanoi selling Pho in street vendor markets since the 40's. It wasn't until the late 70's that Tuan's uncle Thin opened his first Pho noodle house, which still runs today in Hanoi. Over the years their restaurant business has grown into a popular noodle house chain.
Traditions and recipes have been passed down to Head Chef Tuan by his father and uncle's successful noodle houses. In 2008, guided by his father who made a visit to America, the brothers’ recipe for the famous “Pho Thin” noodle soup was handed down to the talented self taught chef, Tuan Vu.
Tuan leads his team of experienced and dedicated chefs in the kitchen of Indochine. He recently made a trip back to Vietnam in 2010, bringing with him new recipes and trends of Vietnamese cuisines.
On his days off, he likes to dine and be catered to, or cook and hang out with friends.
